Coming home from the gym after work starving is one of the worst feelings ever. Often times we reach for something quick to eat to satiate the ravenous hunger after burning so many calories. Pump the breaks and take 15 minutes to make one of my favorite healthy dinners. It’ll fill you up and keep you on track with your diet!
What you’ll need:
Half a chicken breast
Any veggies you would like (I do peppers and onions but whatever you like throw it in there!)
1 tablespoon Lawry’s Carribean jerk marinade
1. Chop vegetables and in a greased skillet on low, sauté vegetables for 5 minutes or until almost thoroughly cooked
2. While you wait for the veggies, chop chicken into small cubes. Add chicken once veggies are almost cooked to your liking
3. Let chicken cook for about 5 minutes making sure that it is cooking all the way through. Then once the chicken is almost fully cooked add a tablespoon of carribean jerk marinade (obviously this is intended to marinade chicken in but I like to use it as a sauce… try it, trust me). Cook for another few minutes until chicken is thoroughly cooked
4. Serve and enjoy!
This should make dinner for 1.
The carribean jerk sauce has a little spice to it and adds a punch of flavor.
